Milk powder is made by drying fluid milk. The powder can be easily transported and stored, and then reconstituted by adding water. The most common varieties of powdered milk are dried whole milk, dried skim milk (DSM), and fortified dried skim milk. It mixes quickly and easily without clumping. The choice dairy beverage of the diet conscious, skimmed milk has an extremely low fat percentage (0.5%) of fat. Due to a reduced fat content, the milk tends to take on a slightly watery flavour which doesn't agree with the palate of some people. In powder form it is creamy white in colour and fine to the touch.
